Cheshire Cheese and Strawberry Greek Salad
- 8 large vine tomatoes cut into rough wedges
2 peeled and roughly chopped cucumbers
a red onion, thinly sliced
a generous handful of Kalamata olives
2 teaspoons of dried oregano
170g Belton Farm Cheshire cheese
a generous handful of strawberries cut into rough wedges
8 tablespoons of Greek extra virgin olive oil
Place the tomatoes, cucumber, red onion, olives, oregano, strawberries, Cheshire cheese and olive oil in a large bowl.
Season to taste and serve with crusty bread to mop up the juices. Alternatively, halve all of the measurements below and have the salad as a side with barbecued meats.
