Savoury Cheese and Olive Cake Bites
- 185g/6oz self-raising flour
1 tsp dried mixed herbs
1 tsp salt
125ml/0.5 cups natural yogurt
60ml/0.25 cups olive oil
120g/4oz Belton Farm Double Gloucester, grated
100g/4oz pitted green olives
Preheat the oven to 180c / 160c fan / gas mark 4.
Line a 15x20cm tin with baking paper.
Mix the flour, dried herbs and salt together.
Whisk the yogurt, olive oil and eggs together.
Combine the wet ingredients with the dry ingredients and fold together until fully combined.
Fold in almost all of the Double Gloucester and the olives.
Pour the mixture into the lined tin and spread into an even layer.
Scatter the remaining Double Gloucester and bake in the oven for 35-40 minutes or until a skewer poked into the middle of the cake comes out clean.
Allow to cool on a wire rack before cutting into cubes.
